This mocktail is the perfect afternoon pick-me-up, with bright flavors of pomegranate and lime balanced by the sweet nuttiness of 100% Raw Coconut Water.
Originating in Persia, nutrient-dense pomegranates (Punica granatum) are actually one of the oldest known fruits, mentioned in many historical writings and artifacts. Rich in phytochemical compounds, pomegranates contain high levels of flavonoids and polyphenols. Among other health benefits, research shows that regularly consuming pomegranate juice lowers blood pressure and reduces atherosclerotic plaque in study participants. 1
Not familiar with pomegranates? Here’s a little rundown:
Rind – The thick reddish outer peel or husk of the pomegranate, which can contain phytonutrients, making it beneficial to juice the whole fruit.
Albedo – The whitish substance between the rind and seeds, or arils (see below) of the pomegranate.
Membrane – The thin, yellow barrier surrounding the pomegranate arils.
Aril – A botanical term for a seed surrounded by a juice sac, found in many fruits like pomegranates and lychee.
- 8oz Harmless Harvest 100% Raw Coconut Water
- 8oz Club Soda
- 8oz Pomegranate Juice
Pomegranate Seeds, Mint, Lime
- Slice lime into thin circles.
- Combine all liquids in large pitcher.
- Pour into 4 glasses, adding ice if desired.
- Garnished with a slice of lime, sprig of mint and pomegranate seeds.
Like citrus, select a pomegranate that feels heavy for its size—this means there’s more juice inside!
