Warm and Cozy Pumpkin Spice Oatmeal

Hi everyone and happy November! I’m excited to be guest blogging this month for
Harmless Harvest. With the holidays quickly approaching, there’s certainly no shortage of
festive decorations, goodies, and treats to get us into the spirit. As for me, I’ve always loved
this magical time of year. Cool temperatures, warm sweaters, and cheerful gatherings with
family and friends; indeed, a few of my favorite things! Most often, these celebrations are
centered around food! (Not a bad thing, right?!) From decorative cookies, beloved
traditional cakes, thick sauces, and decadent drinks, indulging in holiday themed goodness
can leave us feeling less than healthy and fit. While making nutritious choices this time of
year can sometimes feel gloomy, that doesn’t have to be the case. As an athlete, nourishing
my body and feeling my best is very important. Still, there’s no reason to miss out on my
favorite holiday flavors. Earlier this fall, I tried to spice-up my usual oatmeal with a
pumpkin spice twist. The result: a new staple in my seasonal cooking! I’m in love. This
Warm and Cozy Pumpkin Spice Oatmeal is easy enough to make quickly on a Sunday
night and eat throughout the week but festive enough to share with the family on
Thanksgiving morning and beyond. In toying with several recipes, I was pleased with the
delicious substitution of Harmless Harvest Coconut Water. High in essential electrolytes and
potassium, Harmless Harvest Coconut Water has been a great, natural way for me to stay
healthy and hydrated for years. While I’ve always loved the flavor of this drink, I wasn’t sure
how the taste of the coconut water would impact the flavor of the festive mixture. The
delicious result and yummy taste of the seasonal oatmeal is made still more appealing with
its increased nutritional value. Yes, there’s some brown sugar in there…but life is about
balance, right? I hope you’ll try this recipe on your own and love sharing it with your family
and friends as much as I do!


Ingredients:
2 cups Harmless Harvest Coconut Water
2 cups pumpkin puree
2 cups coconut milk
½ cup dried cranberries
¼ cup packed light brown sugar
1 tsp pumpkin pie spice
1 tsp vanilla extract
Dash of salt
2 cups quick oats
Seed mix (for garnish)


Directions:
Stir together the pumpkin puree, coconut milk, dried cranberries, brown sugar,
pumpkin spice, vanilla, large pinch of salt and coconut water in large saucepan.
Bring the mixture to simmer over medium heat. Stir in oats while lowering heat
slightly. Cook over low-medium heat until mixture reaches desired consistency (10-
15 minutes). Ladle into dishes, garnish with a colorful seed mix (or maybe a
cinnamon stick) and serve! Enjoy!
